Recipe of Tofu & Sprout Soup

Extra Virgin olive oil
Bottle Gourd / Dudhi
Onion / Pyaaz
Tofu – Firm – 340gm
Bay Leaf
Vegetable or chicken stock
Fresh Herb

Quantities: 1 tbsp olive oil, 1 cup carrot diced, 1 cup onion diced, 1 cup white gourd diced, 1 tsp ginger grated, 1 & 1/2 ltr homemade dal, vegetable or chicken stock, 2 tbsp chopped fresh herbs, 1 cup sprouts, 1 cup tofu diced, Sliced lemon

Let’s Start
1. Heat a deep sauce pan on moderate heat, add the vegetables and cook until soft. Add stock, ginger, bay leaf and tofu. Bring to a boil. Taste and adjust seasoning.
2. Ladle into soup bowls or mugs, top with herbs, a handful of sprouts and a slice of lemon and serve.
